Lisa’s New Summer Tasting Menu
Lisa’s tasting menu exudes every taste, smell and texture of summer, its light, fresh with ingredients and produce at the peak of their season, either from our dedicated suppliers and growers or from the Northcote garden.
Isle of Wight tomatoes open the 6-course Tasting Menu, bursting with freshness and naturally sweet, served with Lovage from the garden and St James Cheese, which comes into its own after lambing, when the milk flows, this is the Gott’s most famous creation from Cumbria. St James is low in supply and only made using the milk from their 100 Lacaune sheep.
Next, Chicken from our good friends down the road in Goosnargh, the UK’s foremost poultry producer served with lettuce from the garden to create Caesar Salad – Lisa style.
Summer would not be summer without Peter Ascroft’s cauliflowers bang in season grown on the silt soils of the Ribble estuary, famed for their white curds packed with flavour, this simple cauliflower dish will surprise and delight.
Scarlet Prawn with garlic and parsley from the garden, described by Matthew Fort as “a plate of blinding brilliance”.
Lisa then introduces Yorkshire to the menu with lamb loin, slowly roasted, with summer pods and onions from the garden, with white curry flavours.
The menu closes with a dedication to strawberries using Royal Sovereign, a heritage strawberry, a variety served at Elizabeth II coronation banquet, along with Buddy Strawberries from the Northcote garden. Strawberry jelly, Verbena custard, white chocolate, light sponge, an intense strawberry sorbet, fresh strawberries, caramelised cream… mmm…summer in a dish!
