1 Michelin Stars
Australian Chef Shaun Hergatt is a Manhattan-based classically trained, creative modernist. Renowned for his technically precise cooking, Hergatt is inspired by his childhood in rural Queensland, the natural world, art and his daily life in New York.
Chef Hergatt arrived in the United States in 2000 and joined Atelier at The Ritz-Carlton in Central Park, New York. Five years later he was appointed Executive Chef at The Setai in Miami during which time the restaurant collected a three-star review from The Miami Herald, and a “Best New Restaurant” award from Esquire. The restaurant also placed second in the world on Conde Nast Traveler’s “Gold List” in 2008 and 2009.
In 2009, Chef Hergatt returned to New York as Executive Chef and Proprietor of his first solo project, SHO. His impact transformed the Financial District’s culinary landscape bringing fine dining to Wall Street and receiving two Michelin stars along the way, a 29 out of 30 Zagat rating across the board and “Best New Restaurant” accolades from Esquire and New York magazine.
Today, Chef Hergatt is the executive chef and partner of Juni, a Michelin starred boutique restaurant that opened in 2013. Juni, which was awarded its first Michelin star in October 2014 and currently stands at #1 in Tripadvisor’s ranking of New York restaurants. It sits discretely in the shadows of the Empire State Building and skyscrapers of midtown. In this elegant space is found a restaurant where each element, from the restaurant design and tablescape to the composition and presentation of his distinctive dishes, focuses on emphasizing nature at its best.
Juni, loosely translating to “the heart of the season,” the boutique restaurant, which opened is set within Manhattan`s Hotel Chandler and offers menus that are highly responsive to the many micro-seasons within a year. Chef Hergatt champions only the ripest of produce at Juni, so ingredients may only feature for a few weeks and then are retired for the year.
