Lisa is renowned for bringing nostalgia into her dishes and re-creating these memorable flavours with a modern approach.  Lancashire Butter Pie is the perfect comfort food, and often features in Northcote’s snacks. Hindle Wakes – Hen de la Wake or Hen of the Wakes, is a Lancashire recipe dating back to 1900 and used to be eaten during Fair time, a feast dish prepared the day before ready for the returning revelers. Traditional Lancashire Hotpot is everyone’s favourite, any dish that still remains popular 200 years after its creation has to be Lancashire’s top dish, Rick and Ben will guide you through Lisa’s version of the famous Manchester tart.
