3. Great news - The Three Fishes is the winner of this year’s Catey Award for “Pub & Bar Operator of The Year 2005”

Cateys logoAndy Morris, General Manager of The Three Fishes was presented with the Pub & Bar Operator of the Year for 2005 sponsored by Booker Cash & Carry. Held at Le Meridian Grosvenor House Hotel in London, the award was a huge highlight for the 22nd annual Caterer & Hotelkeeper awards, or Cateys as they are more affectionately known.

The panel of judges summed up their decisions as they felt this was a very well thought-out business which offered a great package to customers and was a destination in its own right.

We are all delighted that the hard work of all the team in developing this, our first pub of Ribble Valley Inns, has been recognised by these highly respected awards in the industry.

4.Craig’s trip to Academie Du Champagne

Craig’s trip to Academie Du ChampagneWe were all extremely envious when Craig was invited to join the “Grande Marque” Champagne course in Reims.

The Champagne Academy was created in 1956 by twelve “Grandes Marques” houses, their aim was, and still is, to educate members of the British and Irish Republic’s Wine and Spirits Trade as to the merits of Grandes Marques Champagne. The Academy was extended in 1987 to sixteen members without altering its objectives in any way. The presidential house for the Academy this year is Champagne Bollinger.

This special course is by invitation only, held once a year and is limited to only sixteen students, the board makes the final decision on all candidates. Craig was honoured to be invited and relished the opportunity, rising to the challenges of a heavy schedule of 7 days of tutorials and champagne tastings to learn about every aspect of “Grande Marque” Champagne which was tutored and hosted by the Heads of these Houses.
The week included:

  • “Champagne the framework” a day with Perrier-Jouet – Heidsieck & Co Monopole – Bollinger
  • “The champagne vineyard and the harvest" – a day with Moet & Chandon – Laurent Perrier – Pol Roger
  • "From Picking to bottling” a day with Ruinart – Charles Heidsiek – Pommery
  • “From bottling to packaging” a day with Krug – Veuve Clicquot – Lanson – Piper – Heidsieck
  • “Marketing and distribution / analysis of world markets” a day with Mumm – Taitinger – Roederer

Even for Craig – this was an enormous amount of champagne to be tasted!!

The week finished with an examination on the whole week’s course and we were delighted when Craig passed and has now been accredited by the Academie Du Champagne.

5. New Head Chef at Northcote Manor

Lisa Allen (head chef)We are delighted to announce that Lisa Allen has been promoted to Head Chef. Lisa is a dynamic young lady, formerly educated at Lancaster and Morecambe College. Having held a good position at Le Champignon Sauvage she joined the Northcote brigade in September 2001 working her way up the ranks from Demi-chef-de-partie. Twice finalist of The Young Chef of The Year competition, Lisa is a totally dedicated member of our team which has earned her the right to lead the brigade.

6. The Three Fishes Children’s Competition Winner

Competition Winner Rebecca Age 12Rebecca, Age 12 from Clitheroe is this quarter’s winner of the art competition. For this competition children were invited to draw an innovative vegetable character and Rebecca won with a fabulous and colourful picture of “Elvis The Tomato”

The children’s play sheet at The Fishes includes all sorts of puzzles, quizzes and jokes, all with an educational link to understanding food and where it comes from. The response has been fantastic and more pictures will be appearing on our walls showing their efforts.
